For this test recipe Tuesday the focus was on gluten free products. As you may know it is a lot different to bake gluten free but also a fun challenge. The first I noticed is that the dough is more like cake batter so in working with it I noticed it was not something that was going to get kneaded like regular bread. I have as of today tried my GF recipe twice with no positive ending. After the mixing and letting it rise for the appropriate time I thought I was well on my way to glorious bread town, but in the final bake no such luck. The second time I tried the recipe I let the bread rise longer and put it in a very warm location, but with the final bake the rise was not the best.
I now know that I will have to change some of the elements of my recipe (different gf flour perhaps). As I read through other blogs and ideas and test more recipes I will continue to get better and advance in bringing gluten free to you. I know now you have to treat gluten free as it’s own baking process and it will be nothing like you thought if you are used to baking loaves of bread at home.
On that note more gluten free recipes have come about with much success such as gf focaccia and gf granola bars!
